Chef-kok Arne Russchen van restaurant ADAM heeft een passie voor smaak. Samen met zijn team laat laat hij elk ingrediënt optimaal tot zijn recht komen. “We koken het liefst met de seizoenen mee. In het wild gevangen vis of ‘bijvangst’ is schaars, daarom werken we ook met goede, alter­natieve kweek. En verder kopen we in bij kleine gespecialiseerde leveranciers, als het even kan in de directe om­geving van ons restaurant. Duurzaamheid staat bij ons voorop.”

Wijn

ADAM selecteert zijn wijnen zorgvuldig. We doen dit tijdens een middag proefkoken. We selecteren dan samen met onze wijnleveranciers de wijnen die het beste passen bij het nieuwe verrassings­menu. De uiteindelijke keuze vind je terug in ons wijn­arrangement. Onze uitgebreide wijnkaart wordt met dezelfde zorg samengesteld. We ver­tellen je er graag meer over wanneer je bij ons bent.

For me, "food" is the only form of art that truly engages all the senses. and so, The culinary experience, the ideas and the overall atmosphere at ADAM exceeded any expectation I didn't had. The pairing between the flavors with great wine, the textures, the presentation, the smells, the fun conversations with the other diners and the staff (thank you!) Innovative Küche in cooler Atmosphäre
Wir hatten das Tasting Menu mit Fisch, vegetarisch oder Fleisch wäre auch möglich gewesen. Davor köstliche Austern und dazu eine sehr interessante Weinbegleitung. Die Fischspeisen spannend und kreativ umgesetzt, tolle Kombinationen. Outstanding fine dinning
Me and my fiancée had the pleasure of dinning here after we got engaged. The staff were all amazing and very informative about the different food and wines that were served. We chose the 5 plate option, every plate was delicious and neatly presented. I can’t recommend this place highly enough, I will be visiting again on my return to Amsterdam
